Red Lentil, Sweet Potato & Cavolo Nero Dhal

Why? Itโ€™s full of fibre and dietary folate which we simply donโ€™t get enough in our diets.

Ingredients

For the paste:

  • 1 Bunch of Coriander

  • 1 Knob of Turmeric

  • 1 Knob of Ginger

  • 1 Clove of Garlic

  • 2 tsp Garam Masala

  • 2 tsp of Curry Powder

For the rest:

  • 1 Onion Chopped

  • 1 Can of Chopped Tomatoes

  • 200g of Red Lentils

  • 1 Sweet Potato Peeled and Chopped

  • 500ml of Water

  • 1 Bunch of Calvolo Nero


Add the paste ingredients to a food processor with a drop of oil and some water. Process slowly, adding water until the mixture is blended but falls off a spoon.

Fry the chopped onion in a pan for a few minutes then add the can of tomatoes, red lentils & a chopped sweet potato. Add about 500ml of water or stock and simmer for about 25 minutes until the sweet potato is cooked. Finally a season and add chopped Nero to the mix.
